Coke a cola short ribs

8 pork short ribs

1/4 cup all purpose flour

2 tablespoons of olive oil
3 large diced carrots
1 large diced onion
3 celery stalks large diced
4 garlic cloves
1 cup dark brown sugar
1 can of coke a cola
2 springs of thyme
2 springs of rosemary
6 cups of beef broth

Preheat the oven to 325 degrees F. Salt and pepper the ribs, then dredge them in the flour. Set aside.

Add the olive oil to a pan, brown the ribs on all sides, about 50 seconds per side. Remove the ribs and set aside.

Lower the heat to medium. Add the carrots, garlic, onions and celery to the pan and cook for 2 minutes. Add in the coke of cola and brown sugar and scrape the bottom of the pan to release all the flavorful bits on the pan (de glaze) Add the broth, and bring to a boil. Add the ribs to the liquid; they should be almost completely submerged. Add the thyme and rosemary sprigs

Cover with foil and transfer to the oven. Cook until the ribs are fork-tender and falling off the bone, 3 hours. Remove the pan from the oven and allow to sit for at least 20
